I want to build up a programme of favourite classical pieces and why answerers enjoy these pieces.?

A: Ahh Alberich...taking the easy way out are you? That's okay, I still gave you a thumbs up. It made me laugh. I have a different favorite piece every year it seems, but as I just recently mentioned in a question that I posted, I do have a bit of a soft spot for Mahler's 2nd Symphony (Ressurection). And by "soft spot" I actually mean "partially debilitating obsession" but hey, let's not argue over symantics! It's a mixture of everything that I love about Mahler. The wonderful use of poetry and song. Horn parts that'll give even the best players nightmares. Mahlerian explosions of sound. Playfulness. A Capella choral music. And an ending to knock your socks off. Put it all together and throw an affirmation of faith on top of that, (theres a reason it's called "Ressurection") and you have one pretty great piece of music. On an entirely different part of the spectrum, I am also a big fan Copland's Appalachian Spring. Yes, the rousing shaker theme in its full glory is marevelous, but it can't come close to touching that amazing "very slowly" section at the beginning, especially when the solo violin enters in octaves with the flute. Wow. Who'd have ever thought that an octave harmony could be so dynamic? But that's Copland for you. He is a master of orchestration.
